Because Buffalo meat is lean it should always be cooked slowly to you individual taste. One exception is when stir-frying thinly sliced meat...fry fast in the usual oriental way. Some chefs advise that all larger cuts of Buffalo should be quickly seared on appropriate sides at high heat to seal juices inside the meat and then reduce to "medium" for final phase of cooking. Buffalo meat also doesn't produce fat like beef does so you don't have to drain it when frying.

Roasts should be cooked at between 250-275f (140c)

Steaks, once seared on both sides,should be cooked as per above temperatures (low)
